Out of everything you have studied and done, what do you prefer to study and do? That is what is listed in "area of interest" on a Curriculum Vitae. The format for Area of Interest is usually a statement or set of phrases. Some may have a second paragraph listing the publications or other works most pertinent to those interests. Your statement may be listed before or after your education - some institutions prefer certain formats, so check. But, the statement is short and the remainder of the document substantiates those interests and often more. Area of Interest or fields of interests are an important part of the organization of a CV. Here you list what you are studying, or what of all you have studied is your preference. Areas of interest are your specialties or concentration of what you're in process of becoming expert. They're usually also your competencies, or the areas in which you are ready to teach (or preparing to teach).
